Try Hummus as a Sauce

Hummus is traditionally served as a dip or as part of a mezze plate.  For a change try using it as a sauce. It is delicious served with roast vegetables, especially grilled aubergine scattered with fresh herbs.  It is also very good served with BBQ lamb, chicken or lamb koftas.

Ready made hummus is excellent but if you want to make your own simply: mash together a drained 250g can of chick peas with a crushed clove of garlic, pinch of cumin, lemon juice and 3 tablespoons of water and tahina.  Season with salt and pepper.  Adjust the consistency by adding more water
