Gingerbread People 
 
 
175g/6ozs plain flour  
½ level teaspoon bicarbonate of soda  (provided)  
1 teaspoon ground ginger  
75g/ 3ozs butter or hard margarine  
50g/2ozs soft brown sugar  
2 tablespoons golden syrup  
1 egg yolk or ½ egg. beaten  
to decorate: a little royal icing  
 
 
  1. Grease a baking sheet.  Set the oven to 190C/375F/Gas Mark 5
     
  2. Sift the flour, soda and ginger into a large bowl. Cut the butter into small pieces and rub into the flour until the mixture looks like fine breadcrumbs. Stir in the sugar.
  3.  Beat the syrup and egg together and stir into the flour.  Mix to form a dough and knead gently until smooth.
  4.  Roll out on a lightly floured surface to about 5mm/ 1/4” thick.  Using a gingerbread man cutter or round cutter cut the dough out and set on the baking sheet.   
  5. Bake for 12 - 15 minutes until golden.  The biscuits will still feel soft when cooked.  Cool slightly and then place on a wire rack.
