Freeze ahead for Christmas
 
Ease the pressure of Christmas entertaining and still produce home cooked food by freezing in advance.  Chestnut stuffing, bacon rolls, mince pies and brandy butter all freeze well.  Freeze the brandy butter in small amounts so it can be defrosted as required. 
 
Chicken liver, smoked mackerel or salmon pate freeze successfully and are useful for snacks and dips. Freeze a batch or two of leek soup.  Perfect for a Christmassy supper or lunch with dash or turkey stock and pieces of stilton crumbled on top.
