Buy a griddle

If you are into fresh fast food a griddle is a bonus to any collection of kitchen utensils. Buy one with a good, solid, flat base to distribute the heat evenly. If it is cast iron keep it well oiled to prevent rust. 
 
Griddles can be flat, for drop scones or griddle cakes or ridged, leaving pleasing charred stripes on meat, fish or vegetables.
 
Rules for cooking on a griddle:
 
Slap the food on the griddle and don’t interfere with it, touch it only once to turn.
