Crumbs!
Crumbed fish fillets, chunks of chicken breast or homemade fish cakes make a wholesome light dinner with a large salad and mayonnaise dip or tartar sauce. Use homemade breadcrumbs made from a wholemeal loaf. Use a liquidiser or food processor, start the blades turning and drop in chunks of bread. Process until fine.
Blend in half a teaspoon of paprika pepper to make them golden brown or add a teaspoonful of red pesto or curry paste for extra flavour.
The breadcrumbs will keep overnight in an airtight container or can be frozen.
